Thanksgiving Pumpkin Pie Cookies (Tutorial)

It's a little embarassing to see how many different kinds of pie cookies I've made over the years.
I think it is definitely a sign to all of you how much I love pie. :)

Pumpkin pie is a Thanksgiving icon.
And it is also super yummy.

You can make pie for all the pie lovers and pie cookies for all the cookie lovers. ;)

There's nothing new about the idea of making a pie slice out of a triangle-shaped cookie.
But I tried to put a different spin on it by using sugar cookie dough to form the "pie crust" too.

Once the triangle cookies are cut, add left over cookie dough to the wide edge of the cookies
to form a "hand made crust" just like grandma makes. :)
(see photo below)

After the cookies are baked, outline and flood the entire cookie (except the crust) with orange glaze.

 Dry cookies overnight.

Brush some dry caramel and chocolate dusts onto the crust to give it a realistic baked look.

If desired, add a dollop of "whipped cream" (white edible clay) with a #18 star tip.
(Be sure to knead in a tiny amount of water to the clay to make it pipe-able.)
