Ice Cream Cone Decorated Cookie Collection (2016)

Ice Cream......it's a pretty popular treat.

And I love the iconic shape of an ice cream cone.

Since summer is fading away, I didn't want to miss the chance to make some

super special summer-y ice cream cones. (Try to say that 3x fast!)

Here's to summer and all the memories it provides. :)

Check out some of the cutters I used in this set:

Scoops of Ice Cream Cookie (Tutorial)

After sharing the Ice Cream Cone Cookies with you the other day,
I decided to break the tutorial up into two parts.

First I'll show you how to make ice cream scoop cookies
....along with the easiest way to serve them on an edible cone.

Next time I'll show you how to build a cookie ice cream cone.

To make ice cream scoop cookies you will need:

Take a portion of dough and knead some gel coloring into it.
(Use gloves.....unless you want to have very "pretty" fingers/hands!)
It takes a little time to get the color incorporated, so be patient.

Notice the dough in the photo below is only about half way mixed in.
Mix it until the dough has a consistent, smooth color.

You can go CRAZIE like I did and add all kinds of different colors.
You can even do "fudge" blends (see photos below).

Just try to imagine your favorite ice cream flavors and
add colors and embellishments accordingly.
And to make it even more fun, add flavorings to match.
I highly recommend Spices, Etc for a ton of different natural flavorings.

Once the coloring (and flavoring, if you choose) is thoroughly mixed into your dough,
it's time to make the scoops.
I tried this several ways, and found this method to work best.

Roll your scoop-sized piece of dough into a log and stand it on end.
Then smash it down with with the scoop
to make a perfect "ice cream scoop" shape.

If you want to add chocolate chunks/chips to the scoops,
I recommend adding them AFTER the baking.
As soon as they come out of the oven,
poke the chocolate into them while they are still warm.
(Do it quickly or you will have a melted chocolate mess.....
or maybe that's a good thing. ;))

You will need to bake these scoops a little longer than regular cookies
because of their thickness.

Once your scoops are baked and cooled, you have a few options for their display.
  • Put them on IC cone dishes like at Tradewind Tiaras, Inc. (my inspiration)
  •  Make cookie ice cream cones (Tutorial coming soon!)
  • Or  place them on regular 'ole store-bought ice cream cake cones. (Thanks for the tip, Callye!)

To make these easy ice cream cone treats you will need:
  • Cookie Ice Cream Scoops (see above)
  • Ice Cream Cake Cones
  • Rice Crispy Treats
Be sure to have your scoops and cones sitting out ready for the assembly.
Make up rice crispy treats.
While they are still warm, pack a small amount into each cone.
(You may need a bit of butter on your fingers to prevent sticking!)
Add ice cream scoops to the top.

Easy Peasy. :)

And just as cute as they can be. :)
